Homemade Apple Cider(makes 5 cups cider) 10-12 apples, cut into fours without core 1/2 cup sugar, or if you want it less sweet add just 1/4 cup 6 cinnamon sticks or 1 tablespoon cinnamon 1/2 teaspoon nutmeg 1/4 teaspoon cloves 8 cups water (or enough to fill the pot a few inches above the apples) *Place apples in a large stockpot with water. Stir in the sugar, spices and add in the cinnamon sticks. Bring to a boil for 1 hour. Then cover and simmer for another hour. *Place a strainer over a large bowl and pour the mixture in the strainer. Discard the apples. Strain the cider again through a cheese cloth by placing it over a bowl. This will ensure all the chunks are removed.
*Pour into a glass pitcher and refrigerate. Apple Cider Cocktail Fill an 8 oz glass to the top with ice. Pour 1 shot (or more if you want to get crazy ; )) of BelleWood Vodka over the ice and fill the rest with cider. Stir to mix ingredients and garnish with a cinnamon stick and an apple slice. In a large bowl, combine blood orange wedges, mint leaves and a light sprinkle of sugar. Muddle all the ingredients together until most of the juice is extracted and the mint leaves are bruised.
Distribute muddled oranges and mint leaves between two glasses. Fill with ice. Add rum, simple syrup and San Pellegrino Limonata. Stir and serve immediately.
TIP:
For fancier ice cubes, freeze 1 part San Pellegrino Limonata and 1 part orange juice. Drop one segmented wedge of blood orange in each mold. Allow freezing time before serving your cocktails.
3/4 cup fresh cranberries 1/4 cup white granulated sugar 1/2 cup water Splash of orange juice 1/4 teaspoon pure vanilla extract Fresh English Thyme leaves Gin of choice (I used St. George) Tonic of choice (I used Fever Tree) 1. In a small saucepan, mix together the cranberries, sugar, water, splash of orange juice and vanilla extract. Cook for 10 to 15 minutes, pressing the cranberries with the back of your spoon until they pop (beware–they’ll splatter!). Add the fresh thyme and smash with the back of your spoon–this will release its aromatics. Note: The mixture should be much looser than traditional cranberry sauce. Pour the mixture through a strainer, discarding the solids, and reserving the cranberry syrup. 2. To assemble the cocktail, add about 1 fluid ounces of syrup to each glass. Top with a few cubes of ice, 2 fluid ounces of gin and then top with tonic. Mix and garnish with fresh sprigs of thyme. Makes 4 cocktails
